Monday, we meet again

Because I work soooo far away from where I live, breakfast is usually eaten in the car, meanwhile lunch and snack look like a Tupperware party.  I didn’t wake up quite as early as usual.  I like to run about 3 miles in the morning and then leave the evening to see if I feel like doing anything else.  But I knew that I should really go to Group Power tonight at the gym so I let myself sleep 40 more minutes.

Breakfast was a peach nanner smoothie.  Prior to the smoothie was a cup of coffee and again when I got to work.   The smoothie consisted of:

  • 1/2 large peach
  • 1/2 of yesterday’s small banana
  • 1/2 cup organic TJ’s french vanilla yogurt
  • 1/2 cup organic skim milk
  • 1 scoop of vanilla whey protein

and last but not least….spinach!

See how it changes the color to green?  BUT it does not change the flavor at all!  I get a big kick out of the fact that you can eat a bunch of vitamin rich spinach without even tasting it…not that spinach isn’t good.  I just don’t want to taste it in my smoothie.

On to lunch and snacks of the day.  This is what they looked like the night before.

  • Mid-morning snack – cherry tomatoes, carrot, and part of a cuke with humus that somehow didn’t make it into the photo
  • Lunch – Amy’s Thai curry soup and the return of the whole wheat pita stuffed with humus, goat cheese, roasted red peppers, and more spinach
  • Afternoon Snack – Pink Lady apple from the farmer’s market and light string cheese

I was spooked at work today, which means that someone left a basket of candy on my desk for Halloween.  Now I have two days to spook someone else.  So of course I had to have just a bit of the candy.  I chose two mini candy bars  (Milky Way Dark and Twix).  Not the snack size,  the minis, which are smaller.  🙂  I co-led a meeting today so I just brought the basket a long and passed it around.  The group took about half of it.

Rushing home, as usual, to make it to the gym, I dropped off Rascal and grabbed a cashew cookie Larabar.  I took a picture of it with the iPhone, which I think I have left in the car.

Returning from the gym I wanted something quick because I was sooo hungry and not too far from bedtime.  I chose leftover black beans in two small corn tortillas with a little avocado, salsa, and a dollop of FF sour cream.

I also roasted some Kale topped with sea salt.  I gotta admit, I didn’t really care for it.  It wasn’t gross or even bad.  It just wasn’t something I would choose to eat it again.  Dinner was on a small salad plate to give you an idea of the size.  I definitely needed a bigger plate.

Lastly for dessert, even though I probably didn’t need it, a somewhat strange combination of 1/3 of a piece of gingerbread nuked with raspberries and topped with two generous spoonfuls of Greek yogurt.

I tried to swirl it around to show what was in the entire ramekin, but it just kind of turned into a mess.  I’m off to make oats to eat on the ride tomorrow, pack my lunch, walk Rascal, and find my phone.  Goodnight!
